Feta and Buffalo Chicken Meatballs

Ingredients:

  • 2 lbs. lean ground chicken
  • 1 package, fat-free (or reduced-fat) Feta cheese, crumbled
  • 1 cup Franks buffalo sauce (can add more if desired)
  • 1 egg or ¼ cup egg substitute
  • 3 cloves of garlic
  • 1/2 onion, minced
  • 1 Mrs. Dash Classic Ranch Dip Mix packet
  • Directions
    1. Preheat oven to 400°F. Spray a baking sheet with non-stick spray and set aside.

    2. In a large mixing bowl, combine all ingredients, and mix thoroughly.

    3. Make small meatballs out of your chicken mixture. Place meatballs onto baking sheet.

    4. Bake meatballs 16-18 minutes, or until cooked thoroughly. A meat thermometer must read 165˚F in

    order for ground chicken to be considered safe for consumption based on the USDA’s safe minimum

    cooking temperatures.
