Egg “Muffins” – Soft Protein Foods
-12 eggs or equivalent egg substitute
-1 lb. ground turkey sausage
-1 package 2% milk cheddar cheese, shredded
-1 red bell pepper, chopped
-non-stick cooking spray
*optional: plain Greek yogurt, salsa
Directions: Preheat oven to 450°F. Spray a muffin tin with nonstick cooking spray. Brown breakfast turkey sausage in a nonstick skillet. In a separate bowl, mix eggs, cooked turkey sausage crumbled, cheese, and sautéed bell pepper. Evenly scoop mixture into muffin tin using all of the mixture. Baked for 40 minutes or until egg muffins are cooked thoroughly. Top with salsa and Greek yogurt, if desired.
