Cheesy Egg and Turkey Sausage Casserole

What you need:

-8 eggs or 2 cups egg substitute

-1 cup fat-free milk

-2 cups 2% milk mozzarella cheese

-1 lb. turkey breakfast sausage

-1 Tbsp. garlic powder

-nonstick cooking spray

-pepper, to taste

*optional toppings: salsa, avocado slices

Let’s cook:

1. Preheat oven to 350˚F. Spray a glass baking dish or pie dish with nonstick cooking spray.

2. Brown turkey breakfast sausage in a skillet; place cooked turkey sausage on a paper towel to let


3. In a separate bowl, whisk eggs, milk, 1 cup of low-fat cheese, garlic powder, and pepper.

4. Sprinkle cooled turkey breakfast sausage into your baking dish.

5. Pour egg mixture over turkey breakfast sausage and top with remaining cheese.

6. Place egg casserole in the oven to bake for 40 minutes (or until eggs are firm).

7. Cut into squares and serve along your favorite low carb topping or by itself.

*You could add even more flavor to this recipe by adding: spinach, tomatoes, jalapenos or sautéed

pepper and onions
