Allison’s Fiesta Chicken Salad


1 can low-sodium chicken, strained
2-3 Tbsp. plain greek yogurt
2 Tbsp. ranch seasoning
1/2 green bell pepper, diced
1/2 cup 2% milk cheddar cheese
1 cucumber, sliced

In a bowl, shred chicken with a fork. Add plain greek yogurt, ranch seasoning, and cheese. Stir until mixture is well blended. Fold in diced green bell peppers. Scoop mixture with cucumber slices for an extra crunch you are sure to enjoy!
